Description

Ingredients:

  • 1/2 cup butter, softened
  • 1 1/2 cups sugar
  • 3 large eggs
  • 1/8 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/2 teaspoon coconut extract
  • 1/2 cup sour cream
  • 1 1/2 cups flour
  • 1/3 cup sweetened shredded coconut

Prep & Instructions:

  1. Heat oven to 325°F. Grease and flour bunny pan; set aside.
  2. In a large bowl, on high speed, beat butter and sugar together until creamy.
  3. Add eggs, one at a time, beating well after each addition.
  4. Add all remaining ingredients except flake coconut.
  5. Beat on medium speed, scraping the bowl often, for 2 minutes.
  6. Fold in flake coconut.
  7. Pour batter into prepared pan, filling it 3/4 full and spreading the batter evenly to completely fill the ears and tail.
  8. Bake at 325°F for 40-45 minutes, or until a toothpick inserted comes out clean.
  9. Cool for 10 minutes in the pan; invert onto a cooling rack and cool completely.
  10. Decorate as desired or serve with whipped cream and fresh berries.
