Description

Soft pastel colors make this springtime cake just as beautiful as it is delicious. Simple and classic, this lovely spring cake is sure to be the crowning touch to your Easter Brunch.

Supplies:

  • Buttercream Recipe and ingredients
  • Your favorite cake recipe or mix (12 cups of batter is needed)
  • Egg Mini Treat Silicone Mold # 56WL719
  • Candy Melts, pre-colored or tint them yourself with coloring product suitable for candies.
  • Color Dust for the speckles on eggs
  • For the icing, try our new Liqua-Gel Coloring Kit # 67CM36
  • Piping bags and tips 2D, 67, 5

1. Make candy melts candy eggs. Divide 2 oz. candy into six dipping containers. Melt candy following package instructions. Using candy colors, tint candy pale shades of orange, pink, yellow, violet, green, and blue. Place melted candy into disposable bags and cut off the tip of bags. Pipe candy into Egg Mini Treat Silicone Mold, filling cavities. Tap the mold on the counter to remove air bubbles. Chill until set, about 15 to 20 minutes. Unmold. Repeat with remaining candy for a total of 24 candy eggs. Place completed eggs on parchment paper.

2. Combine Color Dust with a small amount of lemon extract until the mixture is a thin consistency. Dip the brush into the mixture and flick the brush bristles toward candy with finger, creating a splatter pattern on candy eggs. Let dry, about 4 to 5 hours.

3. Prepare and tint icing using a buttercream icing following recipe instructions. Reserve 5 cups of white icing. Divide the remaining icing into six bowls, 1/2 cup icing per bowl. Tint the icing yellow, orange, blue, violet, pink, and green per instructions.

4. Bake and cool the cake. Using your favorite cake recipe or mix, bake and cool two cake layers. Trim layers to 1-1/2" high for a 3" high cake. Fill, stack, and ice the cake with white icing, leaving spatula marks on the sides and top of the cake. Reserve 1/2 cup for the border and the remaining icing for flowers.

5. Decorate the cake by placing candy eggs around the top edge of the cake. Prepare four decorating bags with tip 2D. Using a spatula, stripe and fill with small amounts of icing for the flowers in the following color combinations:

  • Violet, blue, white
  • Pink, yellow, white
  • Yellow, blue, white
  • Violet, orange, white

Pipe flowers around candy eggs. Prepare decorating bags with tip 67 and green icing to add leaves around flowers and eggs. Prepare a decorating bag with tip 5 and 1/2 cup white icing to pipe a bead border around the bottom edge of the cake.
