Cinnamon Spritz Cookies Recipe

Yield: 4 ½ dozen

• 1 cup butter
• 3/4 cup sugar
• 1 tsp vanilla extract
• 2 cups flour
• 1 tsp ground cinnamon
• 1/2 tsp cinnamon extract
• 1/4 tsp salt
• 1 egg yolk

1. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolk and vanilla.
2. Combine the flour, cinnamon, and salt; gradually add to the creamed mixture and mix well.
3. Using a cookie press fitted with the disk of your choice, press the dough 2 inches apart onto ungreased baking sheets. Top as desired.
4. Bake at 375°F for 8-10 minutes or until set. Remove wire to racks.
5. Store in an airtight container.
