Ingredients:

  • 2/3 cup chocolate morsels
  • 1 cup butter
  • 1 1/2 cups packed brown sugar
  • 3 eggs
  • 2 cups pureed beets
  • 1 teaspoon vanilla
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt

Prep & Instructions:

Preheat oven to 375 degrees. Spray or grease pan. Melt together chocolate and 1/4 cup of butter. Cream together remaining butter and brown sugar. Beat in eggs one at a time. In another bowl combine flour, baking soda, and salt. Slowly add dry ingredients to butter, sugar, and egg mixture. Mix in chocolate, beets, and vanilla. Blend thoroughly. Pour into prepared pan. Tap gently on the countertop to remove air bubbles. Bake for 45-55 minutes. Remove from oven when a toothpick inserted into the densest part of the cake comes out clean. Let cool on a rack for 10 minutes before turning out the cake.
