Ingredients
  • 1 ½ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup brown sugar
  • ½ cup melted butter
  • 1 cup canned cranberries
  • 2 eggs
  • ½ cup orange juice
  • 1 teaspoon vanilla
Prep and Instructions

Preheat oven to 350°F. Prepare the pan by brushing with shortening or spraying with baking spray. In a bowl, combine flour, baking soda, and salt. In a large bowl, blend sugar, butter, and cranberry. Add eggs one at a time, mixing thoroughly after each addition. Slowly add the flour mixture, orange juice, and vanilla. Mix until blended. Pour the batter into the prepared pan. Tap on the counter to remove air bubbles. Bake for 30-40 minutes or until a toothpick inserted in the center of the loaf comes out clean. Let it stand on a cooling rack for 10 minutes before inverting onto a plate.
