Ingredients:

  • 1 1/2 cup flour
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 Tbsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground all spice
  • 1/4 tsp ground cloves
  • 1/2 cup buttermilk
  • 1 tsp vanilla
  • 1/2 cup butter, melted and slightly cooled
  • 1 cup packed brown sugar
  • 1/2 cup dark molasses
  • 2 large eggs, room temperature

Instructions:

  1. Preheat the oven to 350°F. Prep the pan with shortening and flour or with baking spray.
  2. Combine flour, baking soda, salt, and spices in a bowl. Set aside.
  3. In a small bowl, combine buttermilk and vanilla.
  4. In a mixer bowl, cream butter and brown sugar. Beat in molasses and add eggs one at a time. Beat until well mixed.
  5. Add 1/3 of the dry flour mixture, then 1/2 of the buttermilk mixture. Repeat this step, adding 1/3 of the flour mixture and the second half of the buttermilk.
  6. Finally, add the last of the flour and mix until smooth.
  7. Pour the batter into the prepared pan.
  8. Bake until done, about 45 minutes.
  9. Cool the cake on a rack for 10 minutes and then turn it out onto the rack to cool completely.
