Ingredients:
- 1 1/2 cup flour
- 1/2 tsp baking soda
- 1 tsp salt
- 1 Tbsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground all spice
- 1/4 tsp ground cloves
- 1/2 cup buttermilk
- 1 tsp vanilla
- 1/2 cup butter, melted and slightly cooled
- 1 cup packed brown sugar
- 1/2 cup dark molasses
- 2 large eggs, room temperature
Instructions:
- Preheat the oven to 350°F. Prep the pan with shortening and flour or with baking spray.
- Combine flour, baking soda, salt, and spices in a bowl. Set aside.
- In a small bowl, combine buttermilk and vanilla.
- In a mixer bowl, cream butter and brown sugar. Beat in molasses and add eggs one at a time. Beat until well mixed.
- Add 1/3 of the dry flour mixture, then 1/2 of the buttermilk mixture. Repeat this step, adding 1/3 of the flour mixture and the second half of the buttermilk.
- Finally, add the last of the flour and mix until smooth.
- Pour the batter into the prepared pan.
- Bake until done, about 45 minutes.
- Cool the cake on a rack for 10 minutes and then turn it out onto the rack to cool completely.
