Ingredients:
- ½ cup flour
- ½ tsp baking soda
- 1 tsp cinnamon
- ½ tsp ginger
- ⅛ tsp nutmeg
- dash of salt
- ½ cup milk
- ½ cup molasses (or brown sugar)*
- ¼ cup oil
- 1 tsp vanilla
- 1 egg
- dash of salt
Instructions:
Prepare the Half-size tea cake pan with baking spray. Preheat the oven to 350 degrees.
Combine the flour, baking soda, spices, and salt in a bowl. Set aside.
Combine the milk, molasses (or brown sugar), oil, and vanilla. Add 1 egg and mix thoroughly.
Add the dry ingredients to the wet ingredients and combine.
Evenly spoon the batter into the pan. Tap gently on the counter to remove air bubbles.
Bake for 10-12 minutes or until a toothpick inserted into one of the center cakes comes out clean.
Cool for 10 minutes in the pan and then invert onto a cooling rack.
Fill the pan with the remaining batter and repeat the baking process.
Yields 24 mini cakes.
*If using molasses, the cakes will turn out darker and differ in flavor. For lighter cakes, use brown sugar.
