Description
Jack-O-Lantern Sandwich Cookies are both sweet and tangy. Melted chocolate is added to the cookie dough, and grated orange zest is added to the icing filling. Devilishly delicious!
Ingredients:
- 3/4 cup butter or margarine, softened
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 squares unsweetened chocolate, melted and cooled
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 2 cups Buttercream frosting (homemade or store brand)
- 2 teaspoons freshly grated orange zest
- Orange Icing Color as needed
Instructions:
- Preheat oven to 375°F. Spray Jack-O-Lantern mini mold cavities with vegetable pan spray; set aside.
- In a large bowl, cream butter and sugar with an electric mixer until light and fluffy. Beat in the egg and vanilla; mix well. Stir in melted chocolate. Combine flour and baking powder; gradually add to the butter mixture, beating until smooth. Press heaping tablespoon cookie dough into prepared cavities (dough should be about 1/4-inch thick).
- Bake for 15 to 18 minutes or until the edges are set (centers will be soft). Cool in the mold on a cooling grid for 20 minutes; remove from the mold and cool completely.
- Meanwhile, combine the frosting recipe of your choice with orange zest in a medium bowl. Add orange icing color to achieve the desired color. When the cookies are completely cooled, spread icing onto the flat side of one cookie and top with a second cookie.
