Ingredients:
- 2 cups flour
- 2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1 teaspoon salt
- 2 1/2 cups sugar
- 3 eggs
- 1/2 cup canola oil
- 1/2 cup sour cream
- 2/3 cup water
- 1 15 ounce can pumpkin puree
Instructions:
- Preheat oven to 350°F. Prepare pan with baking spray or shortening and flour.
- In a bowl, combine flour, baking powder, baking soda, salt, and spices. Set aside.
- In a mixing bowl, combine sugar and eggs. Mix at medium speed until fluffy.
- Add sour cream, canola oil, and pumpkin puree. Mix well.
- Add about half of the flour mixture, then half of the water, another third of the flour mixture, another third of the water, and then the rest of the flour mixture and water. Combine well.
- Pour the batter into the prepared pan. Tap gently on the counter to remove air bubbles.
- Bake for 50-60 minutes on the center rack, or until a toothpick inserted into the center comes out clean.
- Let cool for ten minutes before unmolding.
