Description

Ingredients:

  1. - 1 1/2 cups flour
  2. - 1 teaspoon baking soda
  3. - 1/2 teaspoon baking powder
  4. - 2 teaspoons cinnamon
  5. - 1 teaspoon ground ginger
  6. - 1/2 teaspoon ground cloves
  7. - 1/2 teaspoon ground nutmeg
  8. - 1/2 teaspoon salt
  9. - 3/4 cup sugar
  10. - 3/4 cup packed brown sugar
  11. - 1 teaspoon vanilla
  12. - 1 cup canned pumpkin
  13. - 1/2 cup butter, melted and slightly cooled
  14. - 2 eggs
  15. - 1/4 cup milk
  16. - powder sugar for dusting

Instructions:

  1. Preheat oven to 350°F.
  2. Prep pan with shortening and flour or with baking spray.
  3. In a bowl, combine flour, baking powder, baking soda, spices, and salt. Set aside.
  4. In a large bowl, combine sugars, vanilla, pumpkin, eggs, and butter until smooth.
  5. Add flour mixture and milk and combine all ingredients.
  6. Pour the batter into the prepared pan. Tap the pan on the counter gently to remove bubbles.
  7. Bake until done for 40-50 minutes. The loaf is done when a toothpick inserted in the center comes out clean.
  8. Cool the cake on a rack for 10 minutes, then turn out onto the rack to cool completely.
  9. Dust with powdered sugar.
