Ingredients:
- Walnut Cookies:
- 2 ½ cups all-purpose flour
- ½ tsp. salt
- ¼ tsp baking soda
- ½ tsp. ground cinnamon
- ¼ tsp. ground ginger
- 1 ½ sticks unsalted butter
- 3 oz. cream cheese, softened
- ½ cup honey
- ½ cup packed brown sugar
- 1 large egg yolk
- 1 Tbsp. hazelnut or walnut liqueur
- Pam to spray mold
- Walnut Filling:
- 1 ½ cups ground walnuts
- 1 cup confectioners sugar
- 2 Tbsp. butter, softened
- 2 Tbsp. strong coffee
Instructions:
- Combine flour, salt, cinnamon, and ginger with a whisk in a medium bowl, set aside. Combine butter, cream cheese, and sugars in a separate bowl and beat on medium speed until fluffy. Beat in liqueur and yolk, then add flour mixture until just combined.
- Divide dough in half and form into 2 disks, 1 inch thick. Wrap in plastic and refrigerate for 1 hour. The dough must be cold.
- Spray Pam in the mold. Place dough in the mold firmly. Gently push edges inward a bit and using a wooden skewer, gently ease dough out of the mold. Place shells on one cookie sheet 1" apart and nut meat on another cookie sheet. Freeze for at least 1 hour.
- Preheat oven to 325 degrees F. Bake shells for approximately 10-12 minutes and nut meats for 8-10 minutes. Let cool.
- For the filling: Mix filling ingredients together well. Roll or scoop 1 tsp. of filling and place it on the flat side of a cookie, then press another cookie on top.
