  Water-based emulsions are ideal for flavoring cakes, muffins, pies, fondants, frostings, fillings, and give baked goods a deeper flavor and richer aroma than extracts. Emulsions are also thicker than extracts and distribute more evenly in batters and icings.

  You can use emulsions in recipes calling for extracts by substitution one teaspoon of extract for 1 teaspoon of emulsion.

  Note: Choose an extract instead of an emulsion when making candy and chocolates due to the high water content in emulsions. You can use, however, emulsions in candy fillings.
