Description

Serves: makes 2-3 dozen cookies

Ingredients:

  • 1 box Devil's Food Cake Mix
  • 1/2 cup vegetable oil
  • 1 tsp chocolate extract
  • 2 eggs
  • Andes Mints

Directions:

  1. Preheat oven to 350° F. Line baking sheet with parchment paper.
  2. In a large bowl, whisk together cake mix, oil, chocolate extract and eggs together.
  3. Drop spoonfuls of dough onto baking sheet.
  4. Bake at 350° F for 6 minutes.
  5. Immediately press an unwrapped Andes Mint onto each cookie while still hot. Allow to stand for 5 minutes then smooth out the soft mint with the back of a spoon to cover the cookie.
  6. Remove to a wire rack to cool completely.
