This gourmet couverture has a smooth and creamy mouthfeel, with elegant satin shine and crisp snap when tempered. Callebaut's W2 formula 28% white is an all purpose white chocolate with medium fluidity that can be used for ganache, mousse, dipping, candy making, decorating and baking. The drop-like shape of these callets is ideal for easy, smooth melting. Use Callebaut 28% white chocolate callets in place of white chocolate chips in cakes, cupcakes, and cookies, or create delectable creams, ganache, mousse, and frosting with rich, creamy taste. The medium liquidity of this premium couverture makes it perfect for fountains as well as baking and confectionery work.
Please note that occasionally there may be light-colored streaks or film on the surface of the chocolate. This occurs naturally and is a characteristic of fine chocolate. It will disappear when the chocolate is re-melted.
