Rich, chewy and fully loaded pecan muffins — these Southern-inspired treats taste just like old-fashioned pecan pie!

INGREDIENTS: Brown Sugar (sugar, cane syrup), enriched bleached wheat flour (niacin, iron (reduced), thiamine mononitrate, riboflavin, folic acid, malted barley flour), and pecan.

What You Need:

• 1 packet Just In Time Gourmet Mini Pecan Pie Muffin Mix
• 2 eggs, beaten
• 1 stick butter, melted*

1. Preheat oven to 350 degrees. Stir all ingredients together in mixing bowl until blended.
2. Spray mini muffin tins with flour-based cooking spray. Fill tins half full and bake for 12 minutes
3. Remove muffins from oven, and immediately remove from tins onto a cooling rack or counter top.

*May substitute margarine; muffins will be more cake-like and without the caramelized butter flavor.

Regular Muffin Baking Option: This mix is specifically intended to be baked in mini muffin tins. However, you can bake in regular-size tins for somewhat denser, heavier regular sized muffins. To prepare, spray regular sized muffin tins with flour-based cooking spray, then fill tins half full and bake 20 to 25 minutes. Yields 12 regular sized muffins.
