Substitute 1 ounce of dried shiitake for approximately 8 ounces of fresh mushrooms.

How to Rehydrate Organic Shiitake Mushrooms:

First rinse the mushrooms until they are fully clean. Rehydrate in warm (not boiling) water, wine, or stock for 20 to 30 minutes, then drain and use as desired. In addition, the liquid used for rehydrating can be retained and used to add additional depth of flavor to stocks, soups, or sauces.
